Mrs. Carter’s Soft Gingerbread - Oatlands
3 eggs, slightly beaten 1 cup molasses 1 cup heavy cream 1 ½ cups sugar 3 cups flour 1 tsp baking powder ½ tsp soda 1 tsp ginger 1 ½ tsp each cinnamon, cloves and nutmeg
Combine eggs, sugar, molasses and cream. Beat until well blended. Combine dry ingredients; add to egg mixture and beat until smooth. Bake in 13 by 9 inch greased and floured pan at 325 degrees for 35 to 40 minutes or until done.
Our gingerbread caterer and gift shop associate, Linda Dudenhoefer, added a nice lemon glaze. She used 1 cup powdered sugar, 2 T. butter, a little cream and fresh lemon juice to taste and to achieve your desired consistency for the glaze.
